Turkey Meatloaf – Healthy Cooking Thursday


turkey meatloaf dishToday’s post comes to you from Chef Jon, who has been getting a lot of requests for this recipe.  It is so moist and flavorful that often folks don’t realize it’s turkey!

What’s your ultimate comfort food?  One of mine is Meatloaf.  I have grand memories of my Mother’s meatloaf on most Thursday nights.  She would line the pan with bacon and baste the bovine based creation with ketchup and brown sugar.  The aromas in the house were hypnotizing to us.

I had that meatloaf in mind when I took our recipe from Green Mountain’s Recipes for Living cookbook and tweaked it to better match my memories.  Minced vegetables add needed moisture and boost the flavor while smoked paprika imparts a smoky sweetness that would be lacking without bacon.

Green Mountain Turkey Meatloaf – Serves 4

1 pound lean ground turkey

1 large egg

¼ cup minced onion

¼ cup minced celery

3 tablespoons rolled oats

1 tablespoon minced fresh parsley

1 tablespoon minced scallion

1 teaspoon chili powder

½ teaspoon dried basil

½ teaspoon granulated garlic

½ teaspoon dried oregano

½ teaspoon mustard powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon pepper

Preheat oven to 375° F and line a baking pan with parchment paper.  Mix all ingredients and shape into a loaf on prepared pan.  Bake for about 25 minutes or until an internal temperature of 160° F is reached.  Remove from oven, cover with aluminum foil and let rest 5 minutes allowing the meatloaf to “carry over” cook to 165° F. This also results in a juicier meatloaf.
