Salsas: A Cold-Prep Food For Summer

On summer days when temperatures hover in ranges too hot to handle, the last thing anyone wants to do is start turning on kitchen stoves and ovens.  It’s probably common for people to cook less in the summer and gravitate towards more cold foods, but trying to live on salad alone is a recipe for boredom.

Salsas Are An Easy Way To Add Flavor

As a cold-prep item, salsas are great for the hot summer months, especially when we have more access to the fresh fruits, vegetables, and herbs needed for it. Salsas add flavor to meats, fish, poultry fresh off of the grill, can easily be tossed with cooked grains for a cold salad, and are a welcome addition to a green salad as well.

Fruit Salsas: Peach, Pineapple and Blueberry Salsa Recipes

I love salsas with fruit, like peach salsa or pineapple salsa.  As blueberries come into season, you might enjoy trying this recipe for blueberry salsa, which our not-your-usual weight loss retreat often serves over roasted pork.


  • 1 1/2 cups fresh blueberries
  • 2 tablespoons diced yellow pepper
  • 2 tablespoons diced red pepper
  • 1 1/2 teaspoons fresh lime juice
  • 1 tablespoon 100% fruit apricot preserves
  • 1/2 teaspoon chili powder
  • 1 teaspoon minced cilantro


  1. Toss all ingredients and serve immediately.
