As much of the fall vegetables and fruits are ready for harvest, you may find yourself searching for recipes that allow you to use this produce well into the winter months. Currently in VT, much of the produce being picked can easily be incorporated in soup recipes for the fall and winter. Below is a list of some fall vegetables, with ideas for working them into soups:
- Broccoli – not only can the flowers be used, but the leaves as well. If using both, try making a pureed cream of broccoli soup to get a consistent texture.
- Zucchini Recipes are also still necessary for this time of year, since zucchini is the gift that keeps on giving. Zucchini can be paired with onion, garlic, basil, vegetable broth, and toasted pumpkin seed for a creamy dairy-free pureed soup.
- Beets – while I prefer beets raw and shredded in salads, they do work well in soups. Try roasting them first before incorporating into a soup for a sweeter flavor.
- Pumpkin & Winter Squash – Butternut Squash-Apple Cider Soup is an old favorite at Green Mountain at Fox Run. This recipe could easily be made with pumpkin or any other winter squash.
- Kale & Cabbage – Chiffonade kale or cabbage and add it to a clear broth soup flavored with apple juice, rice wine vinegar, garlic, mushrooms, red pepper flakes, and a bit of tamari creates a nice sweet & sour style cruciferous soup.
- Potatoes -Not only fun to harvest, but also a healthy whole-food starch to add to soups. Potato added to soups that contain kale, leeks or onion are often a nice pairing. Try a pinch of nutmeg in a potato kale soup for an interesting enhancement.
- Legumes – Beans are beyond high-fiber, loaded with vitamins and minerals, and a good source of protein. They are also a welcome protein-based addition to many vegetable soups, such as Green Mountain’s Italian Vegetable and White Bean Soup.
- Onions, Garlic, & Leeks – these are obvious necessities for any decent soup. Sauteing these before adding broth will greatly improve the flavor of the soup.
