Meet the Green Mountain Staff: Chef Lisa Fennimore


Continuing our series introducing our staff here at Green Mountain, I bring you SweetChef Lisa, or so goes one of her email addresses. Yes, she is sweet but I think her handle comes from the fact that she loves to bake.  Witness the dynamite cheesecake mentioned on our blog last Friday.  When she’s not baking sweets, she’s turning out dynamite healthy meals and snacks for the women who come to Green Mountain.  Needless to say, she’s very popular.  You’ve already gotten to know her through her posts she puts up each week here on A Weight Lifted.  But here she is in more detail….

The Green Mountain You What’s your role at Green Mountain at Fox Run?

I’ve been the sous chef and occasional admissions assistant at Green Mountain since 2006.  Previously, I worked in restaurants and delis in Vermont and New Jersey, and I used to be a music teacher.

Highlights of Your Classes at Green Mountain What are some highlights of what women get from your classes at Green Mountain?  What is a personal highlight?

I love seeing lightbulbs go off above women’s heads.  When we share tips and tricks to preparing healthy food quickly and a woman says, “I can totally do that!,” it just makes me smile.

Tips for Managing What are some of your favorite stress management strategies?

Prioritizing is important; remembering who is most important to you (including yourself!) is the most important thing.  Making food together as a family and sitting down to enjoy it together is a simple way to make some great food and memories at the same time.  Additionally, it’s important to be realistic and use healthy shortcuts (such as buying pre-roasted chicken or frozen vegetables) when time is an issue…and when isn’t it?

Managing Your Life How do you make time for yourself?

Wake up ten minutes earlier and give yourself those ten minutes to sit and breathe.  If you pray, pray; if you meditate, meditate; if you love coffee, just sit and mindfully love your coffee.  Keep those minutes sacred and avoid thinking about anything but being happy in your skin, and your day will be off to a great start.

Fun What do you do for fun?

I love singing in the car, or trying out the vocals on the Rock Band video game; if you listen really closely near the Green Mountain kitchen on certain afternoons, you might just hear me belting something out.

Challenge of the Day What is your biggest challenge right now?

I am six weeks away from getting a second bachelor’s degree, this time from the New England Culinary Institute.  The last class is in beverage management, which is all about wine and beer and alcohol.  There’s just so much material to read, and so many laws to learn…but the end is in sight!

More Fun What’s your favorite fairy tale or joke?

I love the Legend of Sleepy Hollow.  Every time I pass the Tarrytown exit on the interstate in southern New York state, I get chills thinking about the Headless Horseman.

Living Life What is your personal philosophy of life? i.e., Sometimes you win some and sometimes you lose or you take it one day at a time…

Give yourself a present everyday.  It can be something simple, like smiling at yourself when you catch your eye in the mirror, or buying glittery animal stickers in the pharmacy.  Just let yourself know that you are loved.

Even More Fun What makes your heart feel light, or what makes you laugh?

The little things my husband does for me just make me grin.  Whether it’s cooking a meal for me or sending me texts of sweet nothings, he always warms my heart.

Clearing Up the Mysteries What’s one thing most people don’t know about you?

My great-grandfather owned an inn and became a bootlegger during Prohibition.  What can I say, providing great hospitality and believing in enjoying life runs in my family.
