Each month, we send a Recipe of the Month to folks on our email list. This May, we featured a salad made with asparagus, arugula, greens and tarragon…all things spring presented in a yummy dish that’s got so many taste teasers, you won’t know what you like best!
It was developed by Alta Engstrom, RD, our communications director. Alta works with our great chefs and takes our quantity recipes down to home-serving quantities. We’re sure none of you want to make asparagus salad for 40.
