Healthy Cooking Thursday – Quinoa Tabouli

Quinoa is pretty interesting on its own, with a fascinating place in history among the Incan empire and a relatively high amount of protein content. But many people wouldn’t consider making a cold salad with it, which is one of my favorite ways to enjoy quinoa. I recommend cooking extra when making a dinner side dish to put to use in a cold salad later.

This recipe is a true melding of cultures. A South American grain in a Lebanese recipe makes for a delicious twist. Serve this lovely summery salad atop some crisp lettuce and alongside some grilled chicken or fish for a delightfully refreshing and healthy meal.

Quinoa Tabouli Serves 4

1 1/2 cups water

3/4 cup quinoa

1/4 cup tomato, diced small

1/4 cup cucumber, diced small

1 1/2 T scallion, minced

1 1/2 T mint, minced

1 1/2 T parsley, minced

1 1/2 T lemon juice

1 1/2 T olive oil

salt and pepper to taste

Bring the water to a boil; add quinoa and lower heat to a simmer.  When water is absorbed (about 15-20 minutes), remove the cooked quinoa to a cookie sheet to cool.

Combine cooled quinoa with remaining ingredients and chill before serving.
