Healthy Cooking Thursday – Goat Cheese Snacks


Glorious Chevre, I love you so.  Goat cheese is an ingredient some people are frightened to try; maybe it’s too “exotic” or they fear the “gamey” flavor expected from a product of a goat.

I have converted dozens of people to chevre lovers, often by being sneaky about it and putting it on a nice cracker with something delicious atop it.  I recommend you do the same.

And why goat cheese?  Aside from its delightful tang and the lovely creamy texture of the most common form available (ya know, that log in shrink wrap), goat cheese is more digestible by humans than cow’s milk cheese and can be enjoyed by folks who sometimes, ah, have issues with dairy.

Goat cheese is lower in fat, calories, and cholesterol, yet higher in protein and calcium, than it’s cow milk equivalent, cream cheese.  Regardless of all that, it’s got a damn good flavor, which is ultimately why I’d rather adorn my bagel with it than boring ol’ cream cheese in the morning.

And then there’s snacktime and dessert.  Few ingredients light up my life like a good cheese, which absolutely adds to the satisfaction of a mid-afternoon or post-dinner nosh.  Here’s a tasty and healthy snack that only takes moments to throw together.

Goat Cheese and Apple Snack serves 2

8 whole grain crackers
2 ounces soft goat cheese
1 apple, sliced thin
black pepper
1 teaspoon honey, maple syrup, or agave nectar (optional, not pictured)

Spread the goat cheese on the crackers and place an apple slice atop.  Sprinkle black pepper and sweetener if desired.
