This blog was inspired by a woman who recently visited our healthy weight loss resort in Vermont. One of the great things about our program is that we believe it is A-OK to enjoy rich desserts in moderation. We practice this by enjoying Ice Cream Night every Friday. But if you are like this wonderful lady, who is unable to eat dairy products or refined sugar, Ice Cream Night can make you feel pretty left out. And feelings of deprivation are just not cool. I know that feeling deprived of a really great experience (which is how I view eating ice cream) will make me want that experience, or a similarly “sinful” one, even more.
So I made the following super-easy recipe for her, which, while it is not ice cream, is an excellent understudy. We have posted similar recipes in our healthy recipe archive; the possibility of variations is endless. Any frozen fruit will work, and many different flavors (vanilla, cinnamon, and maple spring to mind) can be added. Those of you who can enjoy dairy products can use cow’s milk instead of the rice milk; soy milk and almond milk do the trick, too. If you think ahead and freeze fruits at the peak of their season, you can enjoy their flavors throughout the winter, which can prove to be quite a pick-me-up.
The one ingredient I try to always have in my freezer are frozen ripe bananas. Never throw a too-ripe banana away; plan ahead for a future treat. When pureed in a food processor, bananas create a creaminess that is quite similar to soft serve ice cream. No lie! 🙂
Watermelon Freeze – serves 4
1 very ripe banana, sliced and frozen
2 cups watermelon, diced and frozen
rice milk as needed to adjust consistency (about 1/2 cup, depending on liquid in fruit)
sweetener if needed
Combine frozen fruit in the bowl of a food processor. Pulse to break up a little, then add a splash of rice milk. Process until pureed, adding rice milk as necessary to fix consistency. Sweeten if necessary; enjoy immediately!
