Fall is one of my favorite seasons, and that is partially because of the produce available during these months. When the cooler temps roll in, I become a sucker for a crisp apple, a roasted squash, or a juicy pear. The latter is one of those fruits that seems to be falling out of favor among Americans. Remember that episode of “It’s Always Sunny in Philadelphia” where Charlie ate his first pear…in his thirties? Maybe this is because people don’t realize how downright amazing a great pear can be.
The following recipe is a great use for any kind of pear. Whether just barely ripe or a little too soft, you can use them here. I love this compote as a topping for yogurt, oatmeal, crepes, and waffles, or as an accompaniment for a cheese plate. Citrus Pear Compote – 4 servings
About 4 medium sized pears
1 tsp orange and/or lemon zest
1 tablespoon sugar (the sweetness of the pears might require more or less)
1/4 teaspoon powdered ginger
pinch of salt
1 teaspoon vanilla
Peel the pears, remove the seeds and stems, and slice or dice the flesh in uniform pieces. Remove to a pot and add remaining ingredients. Add enough water to just barely cover; bring to a gentle simmer and cook until the pears are the texture you desire. If you’d like, you can thicken this sauce with a cornstarch slurry to yield a more syrupy consistency; you can also add a splash of cranberry or apple juice or apple cider to change up the flavor.
