Apple Recipes Galore


What a year for apples it has been! Are you looking for apple recipes for the abundance of apples in your yard or from an apple-picking outing?

Apples in bowlThis year we had some pretty decent weather conditions for apples in Vermont. I have two trees on my property and I’ve not been able to keep up with the amount of apples that they are throwing. The size of the apples I have this year are also much larger than years past; currently I have 10 gallons of frozen apples in my freezer! And because they are still coming, I’m looking for a variety of ways to prepare them.

Here at Green Mountain we have a lot of creative and easy apple recipes. Here’s a list from our website that will help you put all these autumn apples to good use.

  • Apple Raspberry Crisp – This recipe is a simple one: raspberries, apples, oats, butter, cinnamon and sweetener.  You could easily use this to create spin offs such as peach-apple-barley, strawberry-apple-quinoa, or pineapple-apple-coconut-oat crisp.
  • Baked Apples with Figs in VT Maple Syrup – this could be used as dessert, a snack, or as part of a breakfast.
  • Apple Stuffed Fillets – I love this idea of using shredded apples to “stuff” a piece of white fish. So often apple recipes are all desserts and this is a great way to make proteins more interesting and use apples without picking a recipe with added sugar.
  • Apple-Beet Salad – another creative use for apples, mixing them with veggies.  This cold salad with beets, apples and feta cheese is a great way to use 2 foods that are in season at the same time.
  • Kale Soup – this recipe does not contain apples, but it could. I love adding sliced apples to my kale and white bean soup. Not only is kale also in season too, but the sweetness enhances the flavor of this savory soup, double win.
