A hearty hot soup on a cold winter day can’t be beat. But making it might take more time than we’ve always got. Try these ideas for a tasty soup in only minutes. A little creativity and a few extra ingredients can add extra nutrition and turn canned soup into a real treat!
Very Veggie Soup
(Makes 4 servings)
1 18.5- ounce can of vegetable soup
1 15-ounce can of black beans,drained
1 8-ounce can fire roasted diced tomatoes (or other diced tomatoes)
1 teaspoon chopped rosemary
1 teaspoon choppe
d fresh thyme
Salt and pepper to taste
Combine all ingredients in medium sauce pan and simmer for a few minutes to blend flavors. Serve.
Tomato with Basil and Cheddar Cheese
(Makes 2 servings)
1 18.5-ounce can Hearty Tomato or Tomato Basil soup
1 tablespoon chopped basil
2 tablespoons shredded cheddar cheese (or mozzarella or parmesan cheese)
Combine soup and basil in medium sauce pan and simmer for a few minutes. To serve, top soup with cheese and garnish with additional basil.
Corn Chowder with Chicken and Broccoli
(Makes 3 servings)
1 can 18.5 ounce Corn Chowder or Chicken Corn Chowder
1/2 cup cooked chopped chicken (left over grilled chicken works well here)
1 cup broccoli florets
Dash of cayenne pepper (optional)
Combine all ingredients in medium sauce pan Simmer for a few minute to blend flavors. Serve.
For thinner chowder, add about ½ cup milk.
