Think you don’t like Brussels sprouts? This tasty recipe may change your mind. Serve this colorful and healthful side dish as part of your stress free and healthy Thanksgiving dinner.
(Makes 12 servings)
1 tablespoon olive oil
1 cup thinly sliced sweet onion
2 ounces chopped Prosciutto di Parma
6 cups thinly sliced Brussels sprouts
1 teaspoon lite soy sauce
2 teaspoons sugar
1/2 cup chicken broth
Heat oil in large skillet over medium heat. Add onions and Prosciutto and sauté about 4 minutes or until lightly browned. Remove from skillet. Add Brussels sprouts to the skillet and sauté for about 2 minutes. Add onion, Prosciutto and remaining ingredients and cook about 5 minutes or until most of the liquid has evaporated, and the Brussels sprouts are still crisp.
“Do ahead” note: This recipe can prepared 2-3 hours ahead and reheated jut before serving. Add a little more broth if necessary.
