This colorful, refreshing and simple-to-make salad is a delicious alternative to the usual carrot-raisin fare. Enjoy it with just about any entrée or sandwich. Basil ranks right up there with carrots, so it goes without saying this is a very healthy salad. Thank goodness it’s so tasty, too!
Makes 4 ½ – cup servings
2 cups shredded carrots
2 tablespoons chopped green onions
1 tablespoon thinly sliced fresh basil leaves
1 tablespoon wine vinegar
1 tablespoon olive oil
2 teaspoons honey
Combine all ingredients together and refrigerate for 30 to 60 minutes. Serve.
