I’m always encouraging people to eat beans more often; they are loaded with nutrients and fiber. However, eating beans doesn’t mean you need to start using bean recipes that are 100% vegetarian. Anyone who knows me knows I’m a huge fan of creating healthy recipes by adding ingredients to existing recipes to boost nutrient content. I’m always adding pumpkin, zucchini, and carrots to baked goods.
