Everyone Needs More Veggies

OK, maybe that’s an exaggeration, but most people probably would admit that they don’t eat vegetables as often as they would like. As an example, if I were to follow the 1800 calorie eating pattern the USDA suggests for my age range (which BTW is NOT enough food for me), I would need to eat 2 1/2 cups of vegetables every day. Data collected in 2012 by the CDC showed most Americans aren’t even getting close to this amount.

Consider Making Your Own Salad Bar

Do they really? Probably not, but it feels that way when you come home after work and just don’t feel like slicing and dicing.  I get around that by keeping a salad bar stocked in my fridge at all times. I keep salad prep in divided containers that I can just pull from the fridge, set out on the counter, and have a full salad bar to pick from. I rotate what I put in there each time I shop.

How to Keep Salads Exciting

In the battle of cooked versus raw vegetables, I find people are more likely to prefer raw and salads are generally well accepted. However, salads can become boring if you are using the same ingredients, limiting yourself just to vegetables, or God forbid, using low-cal diet salad dressings. Below are some salad combinations I love:

Salad #1:

  • mixed greens
  • chickpeas
  • fresh dill
  • shredded cheddar
  • grated fresh beets
  • sliced cucumbers
  • Russian or Thousand Island style dressing

Salad #2

  • baby spinach
  • cooked rice noodles
  • Asian-style pan seared tofu (or chicken for all you tofu-haters out there)
  • dried cherries
  • fresh snow peas
  • grated carrots
  • sliced onion
  • Green Mountain at Fox Run’s Tamari Ginger Dressing

Salad #3

  • mixed greens
  • coleslaw
  • diced pineapple
  • toasted almonds
  • broccoli slaw (plain)
  • white beans
  • Green Mountain at Fox Run’s Italian Dressing
