You might think I’m obsessed with apples. Over the last few weeks I have posted a collections of apple recipes, a post on Fiona Apple, and now this week a guest post about apples from a previous intern at Green Mountain at Fox Run. Janet Zimmerman, RD shares her breakdown on how to create an “apple dippin’ breakfast.”
Why focus on breakfast? Well, if there were “superlatives for meals,” breakfast would be voted “most likely to be skipped.” It’s not unusual for people to skip breakfast because they are pressed for time or just don’t feel hungry in the morning.
However, sometimes we may also skip it because we are bored with our typical breakfast choices. I’m all for unconventional breakfast ideas. This combination of Janet’s may help liven up your breakfast choices. Enjoy!
I LOVE breakfast. I also love creating new things to enjoy for breakfast. Since I have been here at Green Mountain for 5 weeks, I have found ways to get creative with my choices, and the breakfast I am sharing today is one of my favorites! Have you ever eaten apples dipped in caramel? This breakfast idea is similar, the dip is just more healthful as it is packed with high quality sources of protein, fat, and carbohydrates to satisfy you for hours!
Start with a bowl and add in:
Protein/Carbohydrate: 1 cup plain greek yogurt
Protein/Fat: 2 Tablespoons ground flax seed, 1 Tablespoon peanut butter or almond butter, or 2 Tablespoons of nuts/seeds
Optional Carbohydrate add ins: ¼ cup granola, 2 Tablespoons dried fruit (prunes, raisins, cherries)
Flavor enhancers: Vanilla & Cinnamon (I believe these are essential!)
Optional Sweetener: 2 teaspoons of drizzled honey or maple syrup
Carbohydrates/Fiber/Fluids: 1 crisp apple (or pear) sliced thinly
