BBQ Chicken Quesadilla Recipe

quesadillaOne of our newest and most popular recipes is Chef David Smith’s BBQ Chicken Quesadilla. This is one of those dinner or lunch ideas that can be quickly whipped up in minimal time with pre-cooked chicken breast on hand, or completely pre-made and frozen before baking.

BBQ Chicken Quesadilla – serves 4

  • 1 pound cooked chicken breast, cubed or shredded/pulled
  • 1/4 cup BBQ sauce
  • 1 cup sliced sautéed or caramelized onions
  • 3/4 cup shredded cheddar cheese
  • 1/2 teaspoon celery salt
  • 1 teaspoon minced roasted garlic (or 1/2 tsp garlic powder)
  • 1/2 teaspoon onion powder
  • 2  whole wheat wraps, 12″ size

Directions:

Preheat oven to 400 degrees. Combine chicken with all ingredients, except the wraps, in a medium sized bowl and mix well. Set one wrap on a sheet pan and spread chicken mixture onto wrap leaving a 1-inch around entire edge empty. Top with remaining wrap and gently press. Bake wrap for about 10 minutes, remove from oven and let sit for 5 minutes before transferring to a cutting board and cutting into 4 equal pieces. Serve while warm.

Alternative directions with uncooked chicken and raw onions:

Preheat oven to 400 degrees. Cut onion large onion into strips, set aside. Take raw chicken and cut into strips approximately 1-inch wide and set aside.  Heat a medium sides sauce pan over medium heat, once warm, add 1 teaspoon of peanut oil and onions to pan. Sautee until onions are soft and translucent; remove from pan and put in medium sized bowl. In same pan, add chicken strips and cook while stirring often until cooked through, approximately 5 minutes. Add chicken and remaining ingredients (except wraps) to bowl with onions and mix well. Set one wrap on a sheet pan and spread chicken mixture onto wrap leaving a 1 inch around entire edge empty. Top with remaining wrap and gently press. Bake wrap for about 10 minutes, remove from oven and let sit for 5 minutes before transferring to a cutting board and cutting into 4 equal pieces. Serve while warm.
