Our Greek Bean Cake: A Better Veggie Burger Recipe

If you are looking for a homemade veggie burger recipe because many of the store-bought veggie burgers seem too processed, then give this Greek Bean Cake recipe a whirl.  While its texture and flavor are much different from a processed veggie burger, you won’t be disappointed.  Not only are these loaded with healthy ingredients, but they are easy to make, and delicious!

  • 1/2 cup tofu
  • 1 tablespoon lemon juice
  • 1/8 teaspoon salt
  • 2 cups cooked garbanzo beans
  • 1 cup cooked kidney beans
  • 1 cup chopped tomato
  • 3/4 cup chopped red onion
  • 1/2 cup olives, halved
  • zest of 2 lemons
  • 3 tablespoons lemon juice
  • 1 tablespoon minced fresh oregano
  • 1/2 cup whole wheat bread crumbs

Preheat oven to 350 degrees and prepare a baking pan with cooking spray.

Wrap tofu in a clean towel and press with a small weight for 10 minutes to remove excess water.  Remove tofu from towel, then dice and toss it with 1 tablespoon lemon juice and 1/8 teaspoon salt and set aside.

In a food processor, puree garbanzo and kidney beans with remaining ingredients.  Transfer bean mixture to a large bowl and fold in the diced tofu.

Form bean cakes using 3/4 cup of bean mix per cake and bake at 350 for 15 minutes on the prepared sheet pan.

Serve while hot.  Extra cakes can be frozen and reheated in a microwave or toaster oven.  Enjoy!

    Made these on the weekend Robyn. My kids tolerated them lol, but ate them, and my vegetarian husband (who can be as picky as the kids) LOVED them. Extras are in the freezer! Great recipe!
