Fruit Salsas: Peach, Pineapple and Blueberry Salsa Recipes
I love salsas with fruit, like peach salsa or pineapple salsa. As blueberries come into season, you might enjoy trying this recipe for blueberry salsa, which our not-your-usual weight loss retreat often serves over roasted pork.
- 1 1/2 cups fresh blueberries
- 2 tablespoons diced yellow pepper
- 2 tablespoons diced red pepper
- 1 1/2 teaspoons fresh lime juice
- 1 tablespoon 100% fruit apricot preserves
- 1/2 teaspoon chili powder
- 1 teaspoon minced cilantro
- Toss all ingredients and serve immediately.
