Summer Meals with Salsa Recipes

On a day like today, with predictions of 95 degrees, the last thing anyone would want to do is get in the kitchen and start turning on stove burners and ovens.  It’s probably common for most people to cook less in the summer and gravitate towards more cold foods, but you can’t live on salad alone this summer.  If you are wondering where to find recipes for the summer months, I might suggest focusing on condiment recipes, such as salsa recipes.

Salsas are an easy way to doctor up meats coming off of the grill, they can easily be tossed with cooked grains for a cold salad and are a welcome addition to a green salad as well.  Salsa, being a cold-prep item, are great for the hot summer months, especially when we may have access to lots of the fresh fruits, vegetables, and herbs needed for salsa.

I love salsas with fruit, like peach salsa or pineapple salsa.  Now that blueberries are coming into season, you might enjoy trying this recipe for blueberry salsa, which our not-your-usual weight loss retreat often serves over roasted pork.

Blueberry Salsa

  • 1 1/2 cups fresh blueberries
  • 2 tablespoons diced yellow pepper
  • 2 tablespoons diced red pepper
  • 1 1/2 teaspoons fresh lime juice
  • 1 tablespoon 100% fruit apricot preserves
  • 1/2 teaspoon chili powder
  • 1 teaspoon minced cilantro

Toss all ingredients and serve immediately.
