Quinoa tabouli salad recipe | Health eating options from Fitwoman.comAt our healthy weight loss spa, we’re constantly seeking out ways to make whole grains more interesting. Quinoa is pretty interesting on its own, with a fascinating place in history among the Incan empire and a relatively high amount of protein content. But many people wouldn’t consider making a cold salad with it, which is one of my favorite ways to enjoy quinoa. I recommend cooking extra when making a dinner side dish to put to use in a cold salad later.

This recipe is a true melding of cultures. A South American grain in a Lebanese recipe makes for a delicious twist. Serve this lovely summery salad atop some crisp lettuce and alongside some grilled chicken or fish for a delightfully refreshing and healthy meal.

Quinoa Tabouli Serves 4

1 1/2 cups water

3/4 cup quinoa

1/4 cup tomato, diced small

1/4 cup cucumber, diced small

1 1/2 T scallion, minced

1 1/2 T mint, minced

1 1/2 T parsley, minced

1 1/2 T lemon juice

1 1/2 T olive oil

salt and pepper to taste

Bring the water to a boil; add quinoa and lower heat to a simmer.  When water is absorbed (about 15-20 minutes), remove the cooked quinoa to a cookie sheet to cool.

Combine cooled quinoa with remaining ingredients and chill before serving.

This dish is wonderful to bring to potlucks and picnics.  What’s your favorite healthy summertime potluck idea?
