Healthy Cooking Thursday – Fast Vegetarian Quesadilla

Healthy fast food recipes are very important to have in your arsenal.  Time is far too precious to the average 21st century working girl, which is why so many of us take the easy way out and stop for that tempting take-out on the way home from a hard day.  But with recipes like this one at the ready in your kitchen, maybe those golden arches will be a little less enticing.  And talk about fast food; this recipe takes 20 minutes to make from start to finish, including the cooking time!

Quesadillas are one of my favorites, and they are so incredibly simple.  The ingredients are easy to keep on hand, and you can add any leftover vegetables you have kicking around in the fridge to change up the flavor and texture.  For the refried beans, you can use our healthy weight loss spa recipe from the 2011 Recipes for Living e-Cookbook, which freezes exceptionally well, or find a low-sodium, real-ingredient- containing canned variety you like.  As for the veggies, any leftovers will do. If you know you’re going to have a busy day tomorrow and will likely be doing this recipe for dinner, make too many vegetables tonight for this purpose.

Fast Vegetarian QuesadillaServes 2

1 12-inch whole wheat wrap
1 cup refried beans
2 ounces cheddar, Monterey jack, and/or pepper jack cheese
Leftover vegetables, such as sautéed peppers, caramelized onions, diced jalapenos, grilled asparagus, cole slaw, cooked carrots, roasted garlic, and/or sautéed kale

Preheat an oven, toaster oven, or Panini press to 425 degrees.

Place parchment paper on a baking pan (so you don’t have to do dishes, either). Place the wrap on the parchment and put half of the cheese on one half of the wrap. Spoon the refried beans on the cheese and add the vegetables. Sprinkle the remaining cheese on top and fold the wrap over the filling.

Bake or panini for 10-15 minutes or until golden brown and delicious. Serve with salsa, yogurt, or light sour cream.
