Healthy Recipe Thursday! Simple Salad Dressing

I learned this salad dressing from my French boyfriend years ago.  It’s stood the test of time and family.  All of us still love it after almost 30 years.  Try one of the variations over cooked whole grains and/or beans.  Such a simple, healthy way to jazz up simple, healthy food.  And who needs bottled salad dressings when you have this?

FYI, the ideal ratio of oil to vinegar (or lemon juice) is 3:1, although depending on the strength of the vinegar, you may use less.  If you use too much, just adjust with a little more oil.  Likewise with the vinegar/lemon juice if it’s not tart enough.

Simple Salad Dressing

3 tablespoons extra virgin olive oil

1 tablespoon fresh lemon juice

1 small clove garlic, minced or pressed

Salt and pepper

Whisk ingredients together and drizzle over salad greens.  It’s that simple!

Variations:

Try mixing the olive oil with different kinds of oils such as walnut or flax seed or even tahini.  Try your favorite vinegar instead of lemon juice.  One I particularly like is red wine vinegar,  which I add along with a teaspoon of Dijon mustard.

Ha, Julie. I thought about putting something about that in the post. Ultimately, though, I think Alan appreciates the understanding of good food that I gained from the old bf. And worrying about old flames on his part would be like the pot calling the kettle black. :)

So…what happened to the boyfriend? :)

Here’s my tried and true salad dressing. It’s become almost like comfort food to me:

1-2 t lemon or lime juice
1-2 cloves minced garlic
1 t spicy brown mustard, dijon mustard or horseradish mustard
1/2 T raspberry vinegar
1 T balsamic vinegar
1 t olive oil
1/4 t black pepper
1/2 t tarragon
1/2 t dried basil

Wisk all ingredients together and pour on salad! You can switch up vinegars, too. Sometimes I’ll substitute tarragon vinegar or red wine vinegar. All depends on what you’re in the mood for.

Mmm…easy and nutritioulicious! My kind of dressing! I don’t have a specific recipe, but I love mixing balsamic vinegar, honey, extra virgin olive oil, salt, and pepper. Great combo of sweet and acidic. And just a little bit goes a long way!

Hey, Lynn. I’m sure you know how it goes with old boyfriends! Let’s just say I ended up with the right one but definitely had a great time with some of the others. :) I love your salad dressing idea. Will definitely give it a try.
