Healthy Recipe Thursday! It’s Holiday Cookie Time!!

biscottiThe ‘net is filled with the smell of baking cookies.  At least it seems that way.  Every food blog I see has stories of Christmas cookies past and present, and Twitter, well, suffice it to say that all the conversation about cookies has me thinking I need to break out the baking sheets.

Rather than reinvent the wheel for today’s post (I really don’t have time to reinvent it anyway; I’m off on another trip a few hours from now), I thought I’d just direct you to one of the favorites among the healthy recipes we post monthly on our site:  Cranberry-Pistachio Biscotti.

Besides being tasty, it’s a great healthy holiday cookie.  Short nutrition review:  Cranberries are a great source of fiber, manganese and vitamin K.  Also vitamin C but not sure that makes it through the baking process.  Besides tasting great, pistachios add to the manganese punch of these cookies and contribute a little copper, too.  Eggs, the essential binding ingredient for these cookies, are a great source of choline, an important nutrient for neurological health.

The biscotti are made with refined flour, which is an opportunity to point out that we can enjoy more refined foods on occasion and still be perfectly healthy.  It’s how often “on occasion” ends up being that makes the difference.

But we’re not eating these for the nutrients, right?  It’s because they taste great.  But it’s the best of both worlds when they have both nutrition and yum factor going for them.

If you’re gluten-sensitive like me, take a gander at these great-looking Cocoa Melt Away Cookies on the Kitchen Therapy blog.  Linda describes them as thin, crispy, airy and chewy.  And here’s another recipe she guest posted on Healthy Eats for Gluten-Free Almond Drops. I may break out those cookie sheets yet!
