Fabulous Fall Foods Make Healthy Eating Easy

Getting back to blogging is getting back to a routine I’ve had going for about four or five years now.  It got me to thinking about other routines in my life.  Being a dietitian and a foodie (maybe I should put foodie first), of course I started thinking about my food routines.

This is a great time of year to think about that.  The season has definitely changed in Vermont.  Crisp days, cool nights greet us.  It’s gorgeous — this time of year always is.  But then again, what time of year isn’t up here?

The change in season brings a welcome change in food, too.  Not that I don’t love the light, refreshing tastes of summer that are perfect for days when the air is enough to keep us warm and comfy.  In the fall, however, food starts to take care of some of that need.  Hot, hearty squash dishes — like this Butternut Squash-Apple Cider Soup and  Autumn Chicken and Butternut Squash Stew — start speaking to me.  Also this Sweet Potato-Portabello Mushroom Wrap. Or this Pork and Sweet Potato Stew.

Stellar taste — stellar nutrition.  It’s a routine I like to follow year-round, even though the actual foods that fit the bill change. Welcome, Fall!

    I just made pumpkin oat bran and pumpkin ice cream!! Anything pumpkin is my favorite fall food 🙂 Next I will try some pumpkin soup!

  2. Some of my favorite fall foods are apples, soups of all kinds, and dense breads. I know you can have those year around, but I especially like to eat them in the fall.

    Vermont is lovely this time of year. Until the snow comes!

  3. I can’t wait for pumpkin. Ooooooooh, I can’t wait! I’m with Gina… pumpkin is my absolute favorite fall food and I love when it starts working its way onto menus. Yummy!

    Diane — Have you snowshoed? That has made winter in Vermont something I really look forward to!

    Jessica — Sweet potatoes are on my list of favorites year round. They really dress up a meal.
