Healthy Recipe: Old Fashioned Blueberry Grunt

2267829594_705c6267831It’s July at last and blueberries are here! Pick them wild and then wow your friends with this simple dessert. There appear to be many variations of this recipe, traditionally made with biscuits or dumplings. This one is courtesy of the Wild Blueberry Association of North America. I read somewhere that this dish gets its funny name because of the noise the fruit can make when it steams in the skillet. The berries may grunt, but you’ll be oohing and aahing your way through every bite.

Old-Fashioned Wild Blueberry Grunt

Serves 6

3 cups wild blueberries
1/2 cup sugar
1/3 cup water
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons sugar
1 tablespoon butter or soft margarine
1/3-1/2 cup milk
1/8 teaspoon cinnamon if desired

Combine blueberries with sugar and water in a large saucepan and bring to a boil. Reduce heat and simmer until berries are soft and begin to thicken, about 5 minutes. Mix flour, baking powder, sugar and salt together. Cut in butter. Gradually stir in enough milk to make a soft dough. Drop the batter by tablespoons on top of the simmering berry sauce. Immediately cover saucepan and cook over low-medium heat 15-18 minutes.

    Nice recipe, I love it because I have all of those ingredients!! Blueberries are so yummy. They have been really cheap lately too (thanks to the summer season!), which makes them even better 🙂
