Healthy Recipe: Endive Salad with Pine Nuts

Traditionally French, this healthy eating salad is easy to prepare, compliments a variety of main courses throughout the year, and can be served warm or cold.  Extra guests? Use one endive per person to easily expand this savory salad.  (Healthy recipe from Northern Nut Growers Association.)

Go Nuts with Pine Nuts

Pine nuts  supply amino acids and provide significant amounts of vitamin A, thiamine, riboflavin, and niacin.  They’re also rich in phosphorus (1 245 mg/kg), which is equivalent to soybeans.  (Nutritional information from Pine-nut.com/image from Melissa’s Produce)

Makes 4-5 servings

2 tablespoons of pine nuts
Canola Oil Spray
2 cups shredded Romaine lettuce
4 Belgian endives, green or purple
1/2 cup grape tomatoes, halved
2 tablespoons of lemon juice
2 teaspoons of honey
1 tablespoon of olive oil or walnut oil
1 teaspoon Dijon mustard
Salt and freshly ground black pepper, to taste
Parsley for garnish

In dry skillet over medium-high heat, toast pine nuts, stirring constantly until golden, about 3 minutes. Place in small bowl, and set aside to cool, In salad bowl, arrange Romaine lettuce. Trim stem ends of endives. Separate leaves and add to bowl. Add tomatoes. In small bowl, whisk together lemon juice, honey, oil and mustard. Season with salt and pepper. Drizzle evenly over salad. Add pine nuts and toss salad. Garnish with parsley.

For an alternate presentation, mix everything but the endive leaves.  Arrange 5 leaves on circular platter like petal leaves.  Spoon in pine nut mixture on each leaf towards the center of the plate.  Serve.
