Strawberry Licuado

As Mother’s Day (May 14th!) approaches, children across the country are making cards, wrapping gifts and planning special meals (although, whether they are truly edible is another question).  Today’s simple and healthy recipe takes advantage of seasonal strawberries and is a perfect suggestion to give to eager-to-please youngsters (adult supervision is advised depending on the child’s age).  A great reinforcement of healthy eating, this quick, tasty and nutritious delight is an especially good example of feeding our daughters (and sons) well.  A decidedly delicious win-win for mom and kids!

Makes 2 servings

1 cup cold whole milk (low fat or nonfat milk can be substituted)
1/2 cup (4 or 5) ice cubes
1-1/2 cups (about 8 oz) stemmed fresh strawberries
1 Tbsp sugar (approximate – may also use sugar substitute to taste)
2 whole strawberries, for garnish

Measure milk and ice into blender; blend 15 seconds. Add strawberries and about 1 tablespoon sugar (depending on sweetness of strawberries); blend 15 seconds or until smooth and frothy. Pour into two chilled 12-oz glasses. Garnish glasses with whole strawberries. Serve immediately with straws.

For a Strawberry-Banana licuado, substitute 1 cup strawberries and 1/2 cup banana chunks for 1-1/2 cups strawberries.

For Strawberry-Orange add 3 tablespoons frozen orange juice concentrate when adding strawberries.
